DIY salmon salad with leftover sweet potato chunks


This DIY salad is super simple, you can adjust this 'build your plate' template to your own taste buds. It has a good source of protein, a variety of vegetables and is rich in healthy fats (omega-3 and mono-unsaturated fats) to support both your physical and mental health. DIY Salmon Salad with sweet potato chunks: serves 1


Ingredients

  • 1.5 cups of salad leaves

  • 1/2 cup of sweet potato chunks

  • 1 tin of salmon (tuna is fine, too)

  • 1/2 avocado, sliced

  • 1/4 onion, sliced

  • 4-6 cherry tomatoes, quartered

Dressing

  • Pinch of salt and pepper

  • 1 Tbs Extra Virgin olive oil

  • Dash of ACV (otherwise, red wine or balsamic vinegar)

Method

  1. Prepare salad vegetables and place into a bowl

  2. Drain salmon and place into a bowl

  3. Dress salad

  4. Enjoy
