I am always on the hunt for quick and reliable recipes that deliver on taste, ease of preparation and budget. Thankfully, my chia pudding ticks all 3 boxes. On a warm Australian morning, nothing gets me filled up better than a chia pudding prepared the night before or on the morning of before I start my work. Add this to your toolbox, and feel free to spice it up with your choice of berries and nuts.
Chia Pudding
Ingredients
Serves 2
Chia Pudding ½
¼ cup chia seeds
1 ½ cups unsweetened coconut milk
Toppings
½ cup coconut yoghurt or YoPro
¼ cup bluebuerries
¼ cup granola
Method
Mix chia seeds and milk in airtight container, stir thoroughly and soak overnight in fridge. You may need to stir it again in the fridge.
Serve chia pudding in bowls and top with yoghurt, blueberries and your favourite granola.
